Description

Ingredients

  • 4 salmon fillets, about 6 ounces each
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 whole lemon, thinly sliced
  • 1 tablespoon fresh lemon juice
  • 1 cup cherry tomatoes, whole
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Preheat oven to 400°F and lightly oil a baking dish or oven-safe skillet.
  2. In a small bowl, mix olive oil, minced garlic, salt, black pepper, and fresh lemon juice.
  3. Arrange salmon fillets in a single layer in the prepared baking dish and scatter cherry tomatoes around them.
