- 2 ribeye steaks (about 1 inch thick)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup beef broth
- 1 teaspoon Dijon mustard
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- Pat steaks dry with paper towels. Season both sides generously with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Once hot, add the steaks and sear for about 3-4 minutes per side for medium-rare (adjust time to your preference).
- Transfer the steaks to a plate and cover loosely with foil to rest.
- In the same skillet, reduce heat to medium and add butter and minced garlic. Sauté for about 30 seconds until fragrant.
- Stir in the beef broth and deglaze the pan, scraping up any browned bits.
- Add heavy cream, Dijon mustard, and Parmesan cheese. Simmer for 2-3 minutes until thickened.
- Return the steaks to the pan, spoon the sauce over the top, and let them warm in the sauce for 1-2 minutes.
- Garnish with chopped parsley if desired. Serve immediately.
Notes
- Let the steaks come to room temperature before cooking for even searing.
- Use a meat thermometer for precise doneness: 130°F for medium-rare, 140°F for medium.
- The sauce also pairs well with mashed potatoes or steamed veggies.
