Ingredients

- 1 bunch fresh kale, washed and stemmed
- 2 large oranges, peeled and segmented
- 1/4 cup parmesan cheese, shaved
- 1/4 cup sliced almonds, toasted
- 3 tablespoons olive oil
- 2 tablespoons fresh orange juice
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- In a small bowl, whisk together the olive oil, fresh orange juice, honey, Dijon mustard, salt, and pepper until well combined.
- Toast the sliced almonds in a dry skillet over medium heat for 2–3 minutes until golden and fragrant. Set aside.
- Place the kale in a large mixing bowl. Pour the dressing over the kale and massage it with your hands for 2–3 minutes until softened and darker in color.
- Add the orange segments, shaved parmesan, and toasted almonds to the bowl. Toss gently to combine.
- Let the salad sit for about 10 minutes before serving to allow the flavors to meld.
- Serve and enjoy!
