Kimchi Spam Fried Rice is a bold and savory dish that combines spicy fermented kimchi with crispy Spam and fluffy rice. It’s a quick, satisfying meal perfect for weeknight dinners or when you crave something comforting and flavorful.

- 2 cups cooked white rice (preferably day-old)
- 1 cup chopped kimchi (plus 2 tbsp of kimchi juice)
- 1/2 can Spam, diced
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1/2 onion, diced
- 1 tablespoon soy sauce
- 1 teaspoon gochujang (Korean chili paste, optional)
- 2 green onions, chopped
- 1 fried egg (per serving, optional)
- Sesame seeds for garnish
Instructions
- Heat vegetable oil in a large pan or wok over medium-high heat. Add diced Spam and cook until golden and crispy, about 3–4 minutes.
- Add the onions and garlic, sauté for another 1–2 minutes until fragrant.
- Add the chopped kimchi and cook for 3–4 minutes until it’s slightly caramelized.
- Stir in the cooked rice, breaking up any clumps. Mix well with the kimchi and Spam.
- Add kimchi juice, soy sauce, and gochujang (if using). Stir to combine evenly.
- Drizzle with sesame oil and stir in chopped green onions.
- Serve hot, topped with a fried egg and sprinkled with sesame seeds if desired.
Notes
- Day-old rice works best as it prevents the dish from becoming mushy.
- Adjust spice level by adding more or less gochujang or kimchi juice.
- Try adding vegetables like peas or carrots for more texture and nutrition.
