Description

Kimchi Spam Fried Rice is a bold and savory dish that combines spicy fermented kimchi with crispy Spam and fluffy rice. It’s a quick, satisfying meal perfect for weeknight dinners or when you crave something comforting and flavorful.

Ingredients

Scale
  • 2 cups cooked white rice (preferably day-old)
  • 1 cup chopped kimchi (plus 2 tbsp of kimchi juice)
  • 1/2 can Spam, diced
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1/2 onion, diced
  • 1 tablespoon soy sauce
  • 1 teaspoon gochujang (Korean chili paste, optional)
  • 2 green onions, chopped
  • 1 fried egg (per serving, optional)
  • Sesame seeds for garnish

Instructions

  1. Heat vegetable oil in a large pan or wok over medium-high heat. Add diced Spam and cook until golden and crispy, about 3–4 minutes.
  2. Add the onions and garlic, sauté for another 1–2 minutes until fragrant.
  3. Add the chopped kimchi and cook for 3–4 minutes until it’s slightly caramelized.
  4. Stir in the cooked rice, breaking up any clumps. Mix well with the kimchi and Spam.
  5. Add kimchi juice, soy sauce, and gochujang (if using). Stir to combine evenly.
  6. Drizzle with sesame oil and stir in chopped green onions.
  7. Serve hot, topped with a fried egg and sprinkled with sesame seeds if desired.

Notes

  • Day-old rice works best as it prevents the dish from becoming mushy.
  • Adjust spice level by adding more or less gochujang or kimchi juice.
  • Try adding vegetables like peas or carrots for more texture and nutrition.
