Description

Crispy, thin flatbread topped with a savory mix of spiced meat and herbs, Lahmacun is a beloved Turkish street food perfect for any time of day.


Ingredients

  • 2½ cups all-purpose flour
  • ¾ cup warm water
  • 2¼ tsp dry yeast
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 lb ground lamb or beef
  • 2 tbsp tomato paste
  • 1 large tomato, finely chopped
  • 1 medium onion, grated or minced
  • 2 cloves garlic, minced
  • ½ cup parsley, finely chopped
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and black pepper to taste
  • Lemon wedges and fresh parsley (for serving)

Instructions

  1. Preheat oven to 475°F (245°C) and place baking tray or pizza stone inside to heat.
  2. In a bowl, mix flour, salt, yeast, water, and olive oil. Knead until smooth and elastic. Let rise for 30 minutes.
  3. In another bowl, mix ground meat, tomato paste, chopped tomato, onion, garlic, parsley, and spices into a paste.
  4. Roll small dough balls into very thin rounds on a floured surface.
  5. Spread a thin layer of the meat mixture over each dough round.
  6. Transfer to hot tray or stone and bake for 6–8 minutes until edges are crisp and golden.
  7. Serve with lemon wedges and fresh parsley.

Notes

  • Roll the dough as thin as possible for that signature crisp texture.
  • Don’t overload with topping to avoid soggy crust.
  • Use a food processor for a smooth topping paste.
  • Store leftovers in the fridge and reheat in oven to keep crispy.
