Description

Rich chocolate brownies layered with a cool peppermint filling and topped with silky chocolate ganache. These bars are fudgy, creamy, and perfect for holidays, parties, or anytime you want a minty chocolate dessert.

  • 1 cup unsalted butter, melted
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups powdered sugar
  • 1/2 teaspoon peppermint extract
  • 1 cup semi sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/4 cup crushed peppermint candy

Instructions

  1. Preheat the oven to 350°F and line an 8 x 8 inch baking pan with parchment paper.
  2. In a large bowl, whisk together the melted butter, granulated sugar, eggs, and vanilla extract until smooth.
  3. Add the flour, cocoa powder, baking powder, and salt, then stir until a thick brownie batter forms.
  4. Spread the batter evenly into the prepared pan.
  5. Bake for 20 minutes, then let the brownie layer cool completely in the pan.
  6. In a medium bowl, mix the powdered sugar with the peppermint extract until a smooth, spreadable peppermint layer forms. Spread it evenly over the cooled brownie base.
  7. Warm the heavy cream, pour it over the semi sweet chocolate chips, and stir until smooth to make the ganache.
  8. Pour the ganache over the peppermint layer and spread gently.
  9. Sprinkle the crushed peppermint candy over the top.
  10. Chill until fully set, then slice into bars and serve.

Notes

  • Let the brownie base cool completely before adding the peppermint layer so the layers stay neat.
  • Chill the brownies before slicing for cleaner squares.
  • Use a warm knife and wipe it clean between cuts for the best presentation.
