Description
A quick and comforting Lazy Egg Fried Rice made with fluffy rice, soft scrambled eggs, colorful vegetables, and savory soy sauce. Perfect for busy weeknights and a delicious way to use leftover rice.

- 3 cups cooked white rice, chilled
- 3 large eggs, beaten
- 1 medium carrot, finely diced
- 1/2 cup green peas
- 2 green onions, thinly sliced
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
Instructions
- Heat a large skillet or wok over medium-high heat.
- Beat the eggs in a small bowl until fully combined.
- Add 1 tablespoon of vegetable oil to the skillet. Pour in the beaten eggs and scramble gently until just set. Remove from the pan and set aside.
- Add the remaining tablespoon of vegetable oil to the skillet. Stir in the diced carrots and cook for about 2 minutes. Add the green peas and cook for 1 minute more.
- Add the chilled rice to the skillet, breaking up any clumps and stirring well with the vegetables.
- Pour the soy sauce over the rice and stir until evenly coated. Return the scrambled eggs to the pan.
- Season with salt and black pepper. Cook for 3 to 4 minutes, stirring frequently, until heated through and slightly crisp in spots.
- Stir in the sliced green onions and cook for 30 seconds more. Serve hot.
Notes
- Use day-old rice for the best texture and to prevent mushiness.
- Add soy sauce gradually and taste before adding extra salt.
- Cook over medium-high heat to achieve lightly crispy rice edges.
- Frozen peas and carrots can be used, just thaw and drain first.
