Description

A quick and comforting Lazy Egg Fried Rice made with fluffy rice, soft scrambled eggs, colorful vegetables, and savory soy sauce. Perfect for busy weeknights and a delicious way to use leftover rice.


Ingredients

  • 3 cups cooked white rice, chilled
  • 3 large eggs, beaten
  • 1 medium carrot, finely diced
  • 1/2 cup green peas
  • 2 green onions, thinly sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper

Instructions

  1. Heat a large skillet or wok over medium-high heat.
  2. Beat the eggs in a small bowl until fully combined.
  3. Add 1 tablespoon of vegetable oil to the skillet. Pour in the beaten eggs and scramble gently until just set. Remove from the pan and set aside.
  4. Add the remaining tablespoon of vegetable oil to the skillet. Stir in the diced carrots and cook for about 2 minutes. Add the green peas and cook for 1 minute more.
  5. Add the chilled rice to the skillet, breaking up any clumps and stirring well with the vegetables.
  6. Pour the soy sauce over the rice and stir until evenly coated. Return the scrambled eggs to the pan.
  7. Season with salt and black pepper. Cook for 3 to 4 minutes, stirring frequently, until heated through and slightly crisp in spots.
  8. Stir in the sliced green onions and cook for 30 seconds more. Serve hot.

Notes

  • Use day-old rice for the best texture and to prevent mushiness.
  • Add soy sauce gradually and taste before adding extra salt.
  • Cook over medium-high heat to achieve lightly crispy rice edges.
  • Frozen peas and carrots can be used, just thaw and drain first.
