Leftover Mashed Potato Cheese Puffs are crispy on the outside, creamy on the inside, and filled with cheddar and herbs — a perfect way to transform leftovers into a savory snack!


Ingredients

  • 2 cups chilled mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped chives or green onions
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and grease a muffin tin.
  2. In a large bowl, combine mashed potatoes, cheddar, chives, flour, baking powder, garlic powder, pepper, and beaten egg.
  3. Scoop mixture into muffin cups, filling nearly to the top.
