Instructions
- Preheat oven to 400°F (200°C) and grease a muffin tin.
- In a large bowl, combine mashed potatoes, cheddar, chives, flour, baking powder, garlic powder, pepper, and beaten egg.
- Scoop mixture into muffin cups, filling nearly to the top.
- Bake for 20-25 minutes or until tops are crispy and golden.
- Remove from oven and let cool 5 minutes before serving.
