Description

Ingredients

  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk

  • Zest of fresh lemons
  • 2 tablespoons fresh lemon juice
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 180°C and lightly grease a cake pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until smooth, then add eggs, milk, vanilla extract, lemon zest, and lemon juice.
  4. Gradually combine the dry ingredients into the wet mixture, mixing gently.
  5. Fold in the fresh blueberries carefully.
  6. Pour the batter into the prepared pan.
  7. Bake for about 35 minutes until golden and a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool slightly before adding glaze if desired, then slice and serve.
