Description

A warm and hearty soup made with tender chicken, orzo, and a fresh squeeze of lemon juice. Comfort food at its finest!


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 pound chicken breasts
  • 1 teaspoon dried thyme
  • 1 cup orzo
  • 2 lemons, juiced
  • Salt and black pepper to taste
  • 2 handfuls baby spinach

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery and cook for 5 minutes until slightly softened.
  2. Add minced garlic and cook for 1 more minute.
  3. Pour in chicken broth and add chicken breasts and thyme. Bring to a boil, then reduce heat and simmer for 15-20 minutes until chicken is fully cooked.
  4. Remove chicken from the pot, shred it with two forks, and return it to the pot.
  5. Add orzo and cook for 7-10 minutes until tender.
  6. Stir in lemon juice and baby spinach. Season with salt and black pepper to taste.
  7. Serve warm and enjoy!

Notes

  • For a creamy texture, add a splash of heavy cream.
  • Add dill or other herbs for additional flavor.
  • Serve with a slice of crispy bread.
