Description
A warm and hearty soup made with tender chicken, orzo, and a fresh squeeze of lemon juice. Comfort food at its finest!
Ingredients

- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 pound chicken breasts
- 1 teaspoon dried thyme
- 1 cup orzo
- 2 lemons, juiced
- Salt and black pepper to taste
- 2 handfuls baby spinach
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery and cook for 5 minutes until slightly softened.
- Add minced garlic and cook for 1 more minute.
- Pour in chicken broth and add chicken breasts and thyme. Bring to a boil, then reduce heat and simmer for 15-20 minutes until chicken is fully cooked.
- Remove chicken from the pot, shred it with two forks, and return it to the pot.
- Add orzo and cook for 7-10 minutes until tender.
- Stir in lemon juice and baby spinach. Season with salt and black pepper to taste.
- Serve warm and enjoy!
Notes
- For a creamy texture, add a splash of heavy cream.
- Add dill or other herbs for additional flavor.
- Serve with a slice of crispy bread.
