- 1 pound large shrimp, peeled and deveined
- 1 cup orzo pasta
- 3 cups fresh spinach, roughly chopped
- 3 tablespoons butter, divided
- 3 cloves garlic, minced
- Zest and juice of 1 lemon
- 2 cups chicken or vegetable broth
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving (optional)
Instructions
- In a medium saucepan, bring the broth to a boil. Add orzo and cook until tender, about 8–10 minutes. Drain if necessary and set aside.
- In a large skillet, heat olive oil and 1 tablespoon butter over medium heat. Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side until pink and opaque. Remove from the skillet and set aside.
- In the same skillet, add remaining butter and minced garlic. Sauté for 30 seconds until fragrant.
- Stir in the cooked orzo, lemon juice, lemon zest, and chopped spinach. Toss until spinach wilts and everything is well combined.
- Return shrimp to the skillet, tossing gently to coat with the sauce. Adjust seasoning if needed.
- Serve immediately, topped with Parmesan if desired.
