Description

A fresh and flavorful dish featuring succulent shrimp in a garlicky lemon butter sauce, paired with creamy spinach orzo for a comforting yet elegant meal.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 3 cups fresh spinach, roughly chopped
  • 3 tablespoons butter, divided
  • 3 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 2 cups chicken or vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. In a medium saucepan, bring the broth to a boil. Add orzo and cook until tender, about 8–10 minutes. Drain if necessary and set aside.
  2. In a large skillet, heat olive oil and 1 tablespoon butter over medium heat. Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side until pink and opaque. Remove from the skillet and set aside.
  3. In the same skillet, add remaining butter and minced garlic. Sauté for 30 seconds until fragrant.
  4. Stir in the cooked orzo, lemon juice, lemon zest, and chopped spinach. Toss until spinach wilts and everything is well combined.
  5. Return shrimp to the skillet, tossing gently to coat with the sauce. Adjust seasoning if needed.
  6. Serve immediately, topped with Parmesan if desired.

  • Use large shrimp for a juicy bite and avoid overcooking.
  • For a dairy-free version, replace butter with olive oil.
  • Swap spinach for kale or arugula for variation.
