- 3/4 cup (150g) granulated sugar
- 1 tablespoon lemon zest
- 1 tablespoon lime zest
- 1 tablespoon finely chopped fresh basil
- 2 cups (250g) all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons lemon juice
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter and granulated sugar until light and fluffy.
- Mix in lemon zest, lime zest, basil, vanilla extract, and lemon juice until combined.
- Gradually add flour and salt, mixing until a soft dough forms.
- Roll dough into a log, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Slice dough into 1/4-inch rounds and place on the prepared baking sheet.
- Bake for 12-15 minutes or until the edges are lightly golden. Cool completely on a wire rack.
- Dust with powdered sugar before serving if desired.
Notes
- Chill the dough well to keep the cookies from spreading.
- For stronger basil flavor, add an extra teaspoon of chopped basil.
- Store cookies in an airtight container for up to one week.
