Description

Lighthouse Inn Potatoes are a creamy, cheesy comfort dish featuring tender chunks of potato baked in a rich white sauce with a crispy, buttery topping. This nostalgic New England favorite is perfect as a holiday side or a cozy family meal addition.

Ingredients

Scale
  • 6 medium russet potatoes, peeled and cut into 1-inch cubes
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk, warmed
  • 1 cup heavy cream
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 1/2 cups shredded white cheddar cheese
  • 1/2 cup crushed buttery crackers (like Ritz)
  • 2 tablespoons melted butter (for topping)
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Place potato cubes in a large pot, cover with water, and bring to a boil. Cook for 8–10 minutes or until just tender. Drain and set aside.
  3. In a saucepan, melt 4 tablespoons of butter over medium heat. Whisk in flour and cook for 1–2 minutes to form a roux.
  4. Slowly add warm milk and cream, whisking constantly until the sauce thickens, about 5 minutes.
  5. Stir in salt, pepper, and garlic powder, then add shredded cheese. Stir until melted and smooth.
  6. Gently fold the cooked potatoes into the cheese sauce and transfer the mixture to the prepared baking dish.
  7. In a small bowl, mix crushed crackers with 2 tablespoons of melted butter. Sprinkle over the top of the potato mixture.
  8. Bake for 25–30 minutes or until bubbly and golden brown on top.
  9. Let rest for 5–10 minutes before serving. Garnish with parsley if desired.

Notes

  • Use Yukon Gold potatoes for a slightly creamier texture.
  • Make ahead and refrigerate before baking, then increase bake time by 10 minutes.
  • Top with extra cheese under the crackers for an even richer crust.
  • Pairs well with roasted meats or served as a standalone vegetarian entrée.
