- 6 medium russet potatoes, peeled and cut into 1-inch cubes
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 2 cups whole milk, warmed
- 1 cup heavy cream
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 1/2 cups shredded white cheddar cheese
- 1/2 cup crushed buttery crackers (like Ritz)
- 2 tablespoons melted butter (for topping)
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Place potato cubes in a large pot, cover with water, and bring to a boil. Cook for 8–10 minutes or until just tender. Drain and set aside.
- In a saucepan, melt 4 tablespoons of butter over medium heat. Whisk in flour and cook for 1–2 minutes to form a roux.
- Slowly add warm milk and cream, whisking constantly until the sauce thickens, about 5 minutes.
- Stir in salt, pepper, and garlic powder, then add shredded cheese. Stir until melted and smooth.
- Gently fold the cooked potatoes into the cheese sauce and transfer the mixture to the prepared baking dish.
- In a small bowl, mix crushed crackers with 2 tablespoons of melted butter. Sprinkle over the top of the potato mixture.
- Bake for 25–30 minutes or until bubbly and golden brown on top.
- Let rest for 5–10 minutes before serving. Garnish with parsley if desired.
