Creamy and indulgent, these loaded scalloped potatoes are layered with tender slices of russet potatoes, melted cheddar, rich cream, and sweet caramelized onions, then finished with fresh chives for the perfect side dish.

- 3 pounds russet potatoes, thinly sliced
- 2 cups heavy cream
- 2 ½ cups shredded cheddar cheese
- 3 tablespoons unsalted butter
- 1 large yellow onion, thinly sliced
- 2 cloves garlic, minced
- 1 ½ teaspoons salt
- 1 teaspoon black pepper
- 2 tablespoons fresh chives, chopped
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- In a bowl, whisk together the heavy cream, garlic, salt, and pepper. Stir in 2 cups of shredded cheddar cheese.
- In a skillet, melt the butter over medium heat and cook the sliced onions until caramelized, about 15 minutes.
- Layer half of the sliced potatoes in the prepared baking dish. Pour half of the cream mixture over them and top with half of the caramelized onions. Repeat with remaining potatoes, cream mixture, and onions.
- Sprinkle the remaining ½ cup cheddar cheese over the top.
- Cover with foil and bake for 45 minutes. Remove foil and bake an additional 20–25 minutes until golden and bubbly.
- Let rest for 15 minutes. Garnish with fresh chives before serving.
Notes
- Use a mandoline for even potato slices.
