- 1/3 cup soy sauce
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 2 tablespoons Worcestershire sauce
- 1 tablespoon lemon juice
- 2 tablespoons brown sugar
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1.5–2 pounds London Broil (top round steak)
Instructions
- In a medium bowl, whisk together soy sauce, olive oil, red wine vinegar, Worcestershire sauce, lemon juice, and brown sugar until well combined.
- Add minced garlic, oregano, black pepper, onion powder, and red pepper flakes if using.
- Place the London Broil in a large zip-top bag or shallow dish and pour the marinade over it.
- Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight for best flavor.
- Remove the meat from the marinade and let it come to room temperature before cooking.
- Grill, broil, or pan-sear the meat to desired doneness, typically 5–7 minutes per side depending on thickness.
- Let rest for 5–10 minutes before slicing thinly against the grain.
Notes
- Marinate the steak overnight for optimal tenderness and flavor.
- This marinade also works well with flank steak or skirt steak.
- Use leftover marinade (boiled for safety) as a basting sauce or glaze.
