Description

Long John Silver’s Hush Puppies are golden, crispy cornmeal bites with a tender, savory interior. These classic Southern-style fritters are the perfect side dish for fried fish or seafood meals.


Ingredients

  • 3/4 cup yellow cornmeal
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/4 teaspoon onion powder
  • 1/4 cup finely chopped onion
  • 1/2 cup buttermilk
  • 1 egg
  • Oil for frying

Instructions

  1. In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, sugar, and onion powder.
  2. Stir in the chopped onion.
  3. In a separate bowl, whisk together buttermilk and egg. Pour the wet ingredients into the dry and mix until just combined. Do not overmix.
  4. Heat oil in a deep fryer or deep skillet to 350°F (175°C).
  5. Drop batter by tablespoonfuls into the hot oil, being careful not to overcrowd the pan.
  6. Fry until golden brown and cooked through, about 2–3 minutes per side. Drain on paper towels.
  7. Serve hot as a side or snack.

Notes

  • Don’t overcrowd the pan to keep the oil temperature steady.
  • For extra flavor, add chopped jalapeños or shredded cheese to the batter.
  • Best served fresh, but you can reheat in the oven to retain crispiness.
  • If you don’t have buttermilk, mix 1/2 cup milk with 1/2 tablespoon vinegar or lemon juice and let sit for 5 minutes.
