Long John Silver’s Hush Puppies are golden, crispy cornmeal bites with a tender, savory interior. These classic Southern-style fritters are the perfect side dish for fried fish or seafood meals.

- 3/4 cup yellow cornmeal
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 1/4 teaspoon onion powder
- 1/4 cup finely chopped onion
- 1/2 cup buttermilk
- 1 egg
- Oil for frying
Instructions
- In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, sugar, and onion powder.
- Stir in the chopped onion.
- In a separate bowl, whisk together buttermilk and egg. Pour the wet ingredients into the dry and mix until just combined. Do not overmix.
- Heat oil in a deep fryer or deep skillet to 350°F (175°C).
- Drop batter by tablespoonfuls into the hot oil, being careful not to overcrowd the pan.
- Fry until golden brown and cooked through, about 2–3 minutes per side. Drain on paper towels.
- Serve hot as a side or snack.
Notes
- Don’t overcrowd the pan to keep the oil temperature steady.
- For extra flavor, add chopped jalapeños or shredded cheese to the batter.
- Best served fresh, but you can reheat in the oven to retain crispiness.
- If you don’t have buttermilk, mix 1/2 cup milk with 1/2 tablespoon vinegar or lemon juice and let sit for 5 minutes.
