- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup Parmesan cheese, grated
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/3 cup sun-dried tomatoes, chopped
- 1 teaspoon paprika
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix until well blended.
- Form mixture into golf ball-sized meatballs and place on a greased baking sheet.
- Bake for 15-20 minutes, or until meatballs are fully cooked.
- Meanwhile, in a large skillet over medium heat, warm olive oil and add chopped sun-dried tomatoes and paprika. Cook for 1-2 minutes.
- Add chicken broth and heavy cream. Bring to a gentle boil and then reduce to a simmer.
- Add in the meatballs and let them simmer in the sauce for 5 minutes, allowing the flavors to blend.
- Serve with pasta, rice, or veggies and spoon sauce over the top.

- For a lower-fat option, use ground chicken breast instead of thighs.
