  • 2 medium yellow onions, chopped
  • 3 garlic cloves, minced
  • 2 large carrots, diced
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 2 cups beef stock
  • 1 cup non-alcoholic dark stout or malt drink
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup frozen peas
  • 2 pounds potatoes (Yukon Gold or Russet)
  • 4 tablespoons butter
  • 1/2 cup milk

Instructions

  1. Preheat Your Equipment: Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Combine Ingredients: In a large skillet, heat olive oil and brown the beef in batches. Remove and set aside. In the same pan, sauté onions, carrots, and garlic. Add tomato paste and flour, then pour in the stock and stout. Return the beef, add thyme, salt, and pepper, and simmer for 25 minutes. Stir in peas at the end.
  3. Prepare Your Cooking Vessel: Boil potatoes until tender, then mash with butter and milk. Season with salt and pepper.
