Description

Mashed Potato Pancakes with Meat Filling are a savory and satisfying dish made from creamy mashed potatoes stuffed with flavorful seasoned ground meat, then pan-fried to golden perfection. Crispy on the outside and tender inside, they’re perfect as a main course or hearty appetizer.


Ingredients

  • 2 cups cold mashed potatoes
  • 1 egg
  • 1/4 cup all-purpose flour (plus extra as needed)
  • Salt and pepper to taste
  • 1/2 tsp garlic powder (optional)
  • 1 tbsp chopped fresh parsley (optional)
  • 1 tbsp oil or butter for frying
  • For the meat filling:
  • 1/2 lb ground beef or ground chicken
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp oil for cooking meat

Instructions

  1. In a skillet over medium heat, add 1 tbsp oil and sauté chopped onion until translucent. Add garlic and cook for 1 more minute.
  2. Add ground meat, paprika, salt, and pepper. Cook until meat is browned and fully cooked. Set aside to cool slightly.
  3. In a large bowl, combine mashed potatoes, egg, flour, salt, pepper, and garlic powder. Mix until a soft dough forms. Add more flour if needed to firm it up.
  4. Divide the potato mixture into equal portions. Flatten each portion into a small disc in your hand.
  5. Spoon a small amount of the meat filling into the center of each disc and carefully fold the edges over to seal. Flatten gently into a pancake shape.
  6. Heat oil or butter in a skillet over medium heat. Cook pancakes for 3–4 minutes per side or until golden and crispy.
  7. Drain on paper towels and serve warm with sour cream or dipping sauce if desired.

Notes

  • Use leftover mashed potatoes for convenience and flavor depth.
  • You can prepare the meat filling in advance and refrigerate until ready to use.
  • Try adding shredded cheese inside for an extra cheesy twist.
