Description
Delicate matcha crepes layered with lightly sweetened whipped cream and a hint of vanilla, perfect for a unique dessert or elegant brunch treat.
Ingredients
Scale
- 1 cup all-purpose flour
- 1 tablespoon matcha powder
- 2 large eggs
- 1 1/4 cups whole milk
- 2 tablespoons granulated sugar
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- White chocolate shavings (optional, for garnish)
Instructions
- In a blender or bowl, combine flour, matcha powder, eggs, milk, sugar, melted butter, and vanilla extract. Blend until smooth, then let the batter rest for 30 minutes.
- Heat a nonstick skillet or crepe pan over medium-low heat and lightly grease with butter.
- Pour a small amount of batter into the pan and swirl to coat the surface evenly. Cook for 1–2 minutes, flip, then cook for another 30 seconds.
- Repeat with the remaining batter, stacking crepes with parchment between them.
- Whip the heavy cream with powdered sugar until soft peaks form.
- Fill or layer crepes with whipped cream and garnish with matcha powder or white chocolate.
- Serve warm or chilled.
Notes
- Resting the batter helps achieve smoother, more tender crepes.
- Use culinary-grade matcha for the best flavor and color.
- Chill your bowl and beaters before whipping cream for better results.
