- 1 packet taco seasoning mix
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup salsa
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup sliced black olives (optional)
- 1/2 cup diced tomatoes (optional)
- Tortilla chips for serving
Instructions
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add taco seasoning and a little water according to package instructions; simmer for 5 minutes.
- In a large serving dish, spread the cooked beef evenly.
- Layer black beans and pinto beans over the beef.
- Spread salsa evenly over the beans.
- Top with sour cream, then sprinkle with cheddar and Monterey Jack cheeses.
- Garnish with green onions, black olives, and diced tomatoes if desired.
- Serve immediately with tortilla chips for dipping.
