Description

A vibrant, oven-roasted dish featuring juicy chicken thighs, cherry tomatoes, Kalamata olives, and zesty lemon, all brought together with herbs and olive oil for a true Mediterranean experience.


Ingredients

  • 1.5 pounds boneless skinless chicken thighs
  • 1 cup cherry tomatoes
  • 1/2 cup Kalamata olives, pitted
  • 1 medium red onion, sliced
  • 4 garlic cloves, whole
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 lemon, juiced and zested
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss chicken thighs, cherry tomatoes, olives, red onion, garlic, oregano, lemon juice and zest, salt, and pepper.
  3. Drizzle the mixture with olive oil and mix until well coated.
  4. Arrange the chicken and vegetables in a single layer on a lightly greased baking dish or sheet pan.
  5. Roast for 35 to 40 minutes until the chicken is fully cooked and golden, and the tomatoes are bursting.
  6. Let it rest for 5 minutes after removing from the oven.
  7. Sprinkle with chopped parsley before serving.

Notes

  • Letting the chicken rest after cooking helps retain its juices.
  • For a crispier texture, use skin-on chicken thighs.
  • Add red pepper flakes if you enjoy a spicy kick.
