- 1 cup cherry tomatoes
- 1/2 cup Kalamata olives, pitted
- 1 medium red onion, sliced
- 4 garlic cloves, whole
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 lemon, juiced and zested
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss chicken thighs, cherry tomatoes, olives, red onion, garlic, oregano, lemon juice and zest, salt, and pepper.
- Drizzle the mixture with olive oil and mix until well coated.
- Arrange the chicken and vegetables in a single layer on a lightly greased baking dish or sheet pan.
- Roast for 35 to 40 minutes until the chicken is fully cooked and golden, and the tomatoes are bursting.
- Let it rest for 5 minutes after removing from the oven.
- Sprinkle with chopped parsley before serving.

- For a crispier texture, use skin-on chicken thighs.
