- 200g halloumi cheese, sliced
- 2 tbsp olive oil
- 1 small red onion, thinly sliced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- Fresh basil leaves for garnish
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a baking dish, arrange a layer of tomato slices evenly.
- Top tomatoes with sliced halloumi and scatter red onion and garlic over the top.
- Drizzle olive oil and sprinkle oregano, thyme, salt, and pepper evenly.
- Bake uncovered for 25–30 minutes until halloumi is golden and tomatoes are softened.
- Garnish with fresh basil leaves before serving warm.
