Description

Mediterranean Tomato and Halloumi Bake is a vibrant, savory dish featuring ripe tomatoes and salty halloumi cheese baked to golden perfection. This Mediterranean-inspired bake is perfect as a main or side, bursting with fresh herbs and bold flavors.


Ingredients

  • 3 large ripe tomatoes, sliced
  • 200g halloumi cheese, sliced
  • 2 tbsp olive oil
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a baking dish, arrange a layer of tomato slices evenly.
  3. Top tomatoes with sliced halloumi and scatter red onion and garlic over the top.
  4. Drizzle olive oil and sprinkle oregano, thyme, salt, and pepper evenly.
  5. Bake uncovered for 25–30 minutes until halloumi is golden and tomatoes are softened.
  6. Garnish with fresh basil leaves before serving warm.
