- 1.5 pounds chicken breast, cut into bite-sized chunks
- 3 medium zucchini, sliced into half-moons
- 2 tablespoons olive oil
- 1 packet (about 1 ounce) ranch seasoning mix
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine chicken, zucchini, olive oil, ranch seasoning, salt, pepper, and garlic powder until evenly coated.
- Lightly grease a 9×13-inch baking dish with olive oil or nonstick spray.
- Spread the chicken and zucchini mixture evenly in the dish. Sprinkle mozzarella and cheddar cheese over the top.
- Bake for 25–30 minutes, until chicken is cooked through and cheese is golden and bubbly.
- Let rest for 5 minutes before serving.
