Description

These mini cupcakes are light, fluffy, and perfect for parties, birthdays, or a sweet bite-sized treat any time of day.


Ingredients

  • 1 cup (120g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (60ml) vegetable oil
  • 1/2 cup (120ml) milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a mini muffin tin with mini cupcake liners.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, beat the egg and sugar until light and fluffy.
  4. Add the oil, milk, and vanilla extract to the egg mixture and mix well.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
  6. Fill each mini cupcake liner about 2/3 full with batter.
  7. Bake for 10–12 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cupcakes cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

  • You can add mini chocolate chips or sprinkles for extra fun.
  • Top with your favorite frosting once cooled.
  • Store in an airtight container for up to 3 days at room temperature.
