Mint Chocolate Chip Snowball Cookies are buttery, melt-in-your-mouth treats bursting with cool mint flavor and dotted with rich chocolate chips. Perfect for holiday cookie trays or any time you crave a refreshing twist on a classic snowball cookie.

- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup powdered sugar (plus more for dusting)
- 1/2 teaspoon salt
- 1 teaspoon peppermint extract
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour
- 3/4 cup mini chocolate chips
- Green food coloring (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Mix in the peppermint and vanilla extracts. Add a few drops of green food coloring if desired and mix until evenly colored.
- Gradually stir in the flour and salt until just combined.
- Fold in the mini chocolate chips.
- Roll the dough into 1-inch balls and place them about 1 inch apart on the prepared baking sheet.
- Bake for 10-12 minutes, or until the bottoms are lightly golden but the tops remain pale.
- Let cookies cool for 5 minutes, then roll in additional powdered sugar while still warm. Cool completely and roll in powdered sugar again for a snowy finish.
Notes
- Do not overbake — snowball cookies should not brown on top.
- You can substitute peppermint extract with mint extract for a different flavor.
- Chill the dough for 30 minutes if it’s too soft to roll.
- Store in an airtight container at room temperature for up to 5 days.
