Description

Crisp-tender green beans tossed in a savory-sweet miso glaze and finished with toasted sesame seeds for a flavorful and healthy side dish.


Ingredients

  • 1 lb fresh green beans, trimmed
  • 2 tbsp white miso paste
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 2 tbsp water
  • 2 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp toasted sesame seeds

Instructions

  1. In a small bowl, whisk together miso paste, soy sauce, rice vinegar, honey, and water until smooth. Set aside.
  2. Blanch the green beans in boiling salted water for 2-3 minutes until bright green and tender-crisp. Drain and set aside.
  3. Heat sesame oil in a large skillet over medium-high heat. Add garlic and ginger and sauté for 30 seconds.
  4. Add green beans and toss for 1-2 minutes to coat with aromatics.
  5. Pour in the miso glaze and toss until the beans are evenly coated and heated through.
  6. Sprinkle with toasted sesame seeds before serving.

  • For extra flavor, toast the sesame seeds in a dry skillet before using.
