- 3/4 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup brewed coffee, cooled
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
- In a separate bowl, mix coffee, milk, oil, egg, and vanilla until well combined.
- Pour the wet ingredients into the dry ingredients and stir gently just until combined.
- Fold in the chocolate chips.
- Divide the batter evenly among muffin cups, filling each about 3/4 full.
- Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
