Scale
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda

- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts or raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In a large bowl, beat the oil, granulated sugar, and brown sugar until well combined. Add the eggs one at a time, beating well after each addition.
- Stir in the applesauce and vanilla extract until smooth.
- Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix. Fold in nuts or raisins if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then remove and transfer to a wire rack to cool completely.
Notes
- Use unsweetened applesauce for better control over sweetness.
- This bread can be wrapped and stored at room temperature for up to 3 days or frozen for up to 2 months.
- Try adding a streusel topping or a light glaze for extra sweetness.
