Description
This moist chocolate cake is rich, fudgy, and incredibly tender, made with simple pantry staples and a secret ingredient that brings out the deepest cocoa flavor.
Ingredients
Scale
- 1 ¾ cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, whisk the eggs, milk, oil, and vanilla until smooth.
- Pour the wet ingredients into the dry and stir until just combined.
- Evenly divide the batter between the prepared pans and gently tap to release air bubbles.
- Carefully pour in the boiling water, dividing equally. Stir gently to incorporate. Batter will be thin.
- Bake for 30 to 35 minutes or until a toothpick inserted comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Frost with your favorite chocolate frosting and decorate as desired.
Notes
- Use boiling water to bloom the cocoa for richer flavor.
- Do not overmix the batter once wet and dry ingredients are combined.
- The cake layers can be made ahead and stored tightly wrapped overnight.
- For extra indulgence, top with ganache or chocolate curls.
