Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh basil (or 1 tablespoon dried basil)
  • 1 tablespoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 5–6 minutes per side until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, pour in chicken broth and bring to a simmer, scraping any browned bits from the bottom.
  4. Add heavy cream, Parmesan, garlic powder, onion powder, and Italian seasoning. Stir well and let simmer for 5–6 minutes until slightly thickened.
  5. Add chopped basil and stir. If desired, mix in the cornstarch slurry and simmer for an additional 1–2 minutes until thickened to your liking.
  6. Return chicken to the skillet and spoon sauce over the top. Sprinkle each piece with shredded mozzarella.
  7. Cover the skillet with a lid and cook for 2–3 more minutes until mozzarella is melted and bubbly.
  8. Serve hot with pasta, mashed potatoes, or a side of vegetables.

Notes

  • Use fresh mozzarella slices instead of shredded for a more gourmet touch.
  • Add sun-dried tomatoes or spinach for extra flavor and color.
