Description

The Mushroom Swiss Breakfast Grilled Cheese is a savory morning sandwich featuring sautéed mushrooms, creamy Swiss cheese, and fluffy scrambled eggs, all melted between golden, buttery toast. It’s the perfect combination of hearty and cheesy for a satisfying breakfast.


Ingredients

  • 4 slices of bread (sourdough or your choice)
  • 2 tbsp butter, softened
  • 4 large eggs
  • 2 tbsp milk
  • 1 tbsp olive oil
  • 1 cup mushrooms, sliced (cremini or button)
  • 1/2 small onion, finely chopped (optional)
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 4 slices Swiss cheese

Instructions

  1. In a skillet, heat olive oil over medium heat. Add mushrooms (and onion if using) and cook until tender and browned, about 5-6 minutes. Season with garlic powder, salt, and pepper. Set aside.
  2. In a bowl, whisk eggs with milk, salt, and pepper. Scramble in a nonstick skillet over low heat until just set. Set aside.
  3. Butter one side of each bread slice. Place two slices butter-side-down on a skillet over medium-low heat.
  4. Layer each with a slice of Swiss cheese, scrambled eggs, sautéed mushrooms, and another slice of cheese. Top with the remaining bread slices, butter-side-up.
  5. Grill until golden brown and the cheese is melted, about 3-4 minutes per side.
  6. Cut in half and serve warm.

Notes

  • Add baby spinach or arugula for a fresh twist.
  • Use pre-cooked mushrooms to speed up the process on busy mornings.
  • Can be made vegetarian by omitting the eggs for a lighter version.
