- 4 slices of bread (sourdough or your choice)
- 2 tbsp butter, softened
- 4 large eggs
- 2 tbsp milk
- 1 tbsp olive oil
- 1 cup mushrooms, sliced (cremini or button)
- 1/2 small onion, finely chopped (optional)
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 4 slices Swiss cheese
Instructions
- In a skillet, heat olive oil over medium heat. Add mushrooms (and onion if using) and cook until tender and browned, about 5-6 minutes. Season with garlic powder, salt, and pepper. Set aside.
- In a bowl, whisk eggs with milk, salt, and pepper. Scramble in a nonstick skillet over low heat until just set. Set aside.
- Butter one side of each bread slice. Place two slices butter-side-down on a skillet over medium-low heat.
- Layer each with a slice of Swiss cheese, scrambled eggs, sautéed mushrooms, and another slice of cheese. Top with the remaining bread slices, butter-side-up.
- Grill until golden brown and the cheese is melted, about 3-4 minutes per side.
- Cut in half and serve warm.
Notes
- Add baby spinach or arugula for a fresh twist.
- Use pre-cooked mushrooms to speed up the process on busy mornings.
- Can be made vegetarian by omitting the eggs for a lighter version.
