- 2 pounds fresh mussels, cleaned and debearded
- 1 cup crushed tomatoes
- 4 cloves garlic, minced
- 3 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- 1 small red chili pepper, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place a large pot on medium heat and allow it to warm gently.
- Add olive oil and minced garlic to the pot and cook until fragrant.
- Stir in crushed tomatoes, chopped chili pepper, salt, and black pepper, then let the sauce simmer for a few minutes.
- Add the cleaned mussels directly into the simmering sauce.
- Cover the pot and cook for about 5 to 7 minutes until the mussels open.
- Sprinkle chopped fresh parsley over the top and gently stir.
- Serve immediately while hot.
Notes
- Discard any mussels that remain closed after cooking.
- Serve with crusty bread to soak up the flavorful sauce.
- Rinse mussels thoroughly before cooking to remove any sand.
