Description

Tender mussels simmered in a rich tomato, garlic, and olive oil sauce with a touch of chili and fresh parsley. This coastal Italian seafood dish is simple, aromatic, and perfect for dipping with warm bread.


Ingredients

  • 2 pounds fresh mussels, cleaned and debearded
  • 1 cup crushed tomatoes
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 small red chili pepper, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place a large pot on medium heat and allow it to warm gently.
  2. Add olive oil and minced garlic to the pot and cook until fragrant.
  3. Stir in crushed tomatoes, chopped chili pepper, salt, and black pepper, then let the sauce simmer for a few minutes.
  4. Add the cleaned mussels directly into the simmering sauce.
  5. Cover the pot and cook for about 5 to 7 minutes until the mussels open.
  6. Sprinkle chopped fresh parsley over the top and gently stir.
  7. Serve immediately while hot.

Notes

  • Discard any mussels that remain closed after cooking.
  • Serve with crusty bread to soak up the flavorful sauce.
  • Rinse mussels thoroughly before cooking to remove any sand.
