Description

Nacho Egg Rolls are a delicious fusion snack that combines the cheesy, spicy flavors of nachos with the crispy texture of egg rolls. Perfect for parties, game day, or as a fun appetizer.


Ingredients

  • 1/2 lb ground beef
  • 1/2 packet taco seasoning
  • 1/4 cup water
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup corn (frozen or canned)
  • 1/2 cup diced tomatoes (or Rotel)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup chopped green onions
  • 1/4 tsp chili powder (optional)
  • 12 egg roll wrappers
  • Vegetable oil for frying
  • Optional: sour cream, guacamole, salsa for dipping

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add taco seasoning and water. Stir and simmer for 2–3 minutes until thickened.
  3. Stir in black beans, corn, tomatoes, green onions, and chili powder. Cook for 2–3 more minutes, then remove from heat.
  4. Let the filling cool slightly, then stir in the shredded cheese.
  5. Lay out an egg roll wrapper with a corner facing you. Spoon 2–3 tablespoons of filling into the center.
  6. Fold the bottom corner over the filling, then fold in the sides and roll tightly, sealing the edge with a dab of water.
  7. Heat 1–2 inches of oil in a pan to 350°F (175°C). Fry egg rolls in batches for 2–3 minutes per side, or until golden and crispy.
  8. Drain on paper towels and serve hot with dipping sauces.

Notes

  • You can bake or air-fry the egg rolls for a lighter version.
  • Swap ground beef for ground turkey or a plant-based alternative.
  • Customize the filling with jalapeños, olives, or extra cheese.
