Description
Nacho Egg Rolls are a delicious fusion snack that combines the cheesy, spicy flavors of nachos with the crispy texture of egg rolls. Perfect for parties, game day, or as a fun appetizer.

- 1/2 lb ground beef
- 1/2 packet taco seasoning
- 1/4 cup water
- 1/2 cup canned black beans, rinsed and drained
- 1/2 cup corn (frozen or canned)
- 1/2 cup diced tomatoes (or Rotel)
- 1 cup shredded cheddar or Mexican blend cheese
- 1/4 cup chopped green onions
- 1/4 tsp chili powder (optional)
- 12 egg roll wrappers
- Vegetable oil for frying
- Optional: sour cream, guacamole, salsa for dipping
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add taco seasoning and water. Stir and simmer for 2–3 minutes until thickened.
- Stir in black beans, corn, tomatoes, green onions, and chili powder. Cook for 2–3 more minutes, then remove from heat.
- Let the filling cool slightly, then stir in the shredded cheese.
- Lay out an egg roll wrapper with a corner facing you. Spoon 2–3 tablespoons of filling into the center.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly, sealing the edge with a dab of water.
- Heat 1–2 inches of oil in a pan to 350°F (175°C). Fry egg rolls in batches for 2–3 minutes per side, or until golden and crispy.
- Drain on paper towels and serve hot with dipping sauces.
Notes
- You can bake or air-fry the egg rolls for a lighter version.
- Swap ground beef for ground turkey or a plant-based alternative.
- Customize the filling with jalapeños, olives, or extra cheese.
