Description

Golden crust, gooey cheese, tender chicken, and a crunchy nacho topping all tucked into a warm loaf. Comfort food with a fiesta personality.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 tablespoons chopped green chilies
  • 2 tablespoons chopped fresh coriander
  • 1 medium crusty bread loaf, hollowed
  • 1 cup crushed nacho chips
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a mixing bowl, combine shredded chicken, cheddar, mozzarella, mayonnaise, garlic powder, onion powder, paprika, green chilies, and coriander. Season with salt and pepper and mix until creamy.
  3. Hollow out the bread loaf, leaving sturdy sides and base to hold the filling.
  4. Spoon the chicken mixture into the hollowed loaf and level the top. Sprinkle crushed nacho chips evenly over the surface.
  5. Place the stuffed loaf in a baking dish and bake for 20–25 minutes until the cheese is melted and the top is golden and bubbling.
  6. Remove from the oven and garnish with extra chopped coriander or sliced jalapeños if desired.
  7. Slice and serve warm while the cheese is gooey and the nachos are crisp.

Notes

  • Crush the nacho chips just before topping for maximum crunch.
  • Use slightly stale bread for better structure and less sogginess.
  • Go light on extra salt since cheese and chips are already salty.
  • For a lighter version, replace mayonnaise with Greek yogurt.
  • Reheat leftovers in the oven to re-crisp the crust.
