- 2 cups cooked shredded chicken
- 1 1/2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 2 tablespoons chopped green chilies
- 2 tablespoons chopped fresh coriander
- 1 medium crusty bread loaf, hollowed
- 1 cup crushed nacho chips
- Salt and black pepper to taste
Instructions
- Preheat oven to 180°C (350°F).
- In a mixing bowl, combine shredded chicken, cheddar, mozzarella, mayonnaise, garlic powder, onion powder, paprika, green chilies, and coriander. Season with salt and pepper and mix until creamy.
- Hollow out the bread loaf, leaving sturdy sides and base to hold the filling.
- Spoon the chicken mixture into the hollowed loaf and level the top. Sprinkle crushed nacho chips evenly over the surface.
- Place the stuffed loaf in a baking dish and bake for 20–25 minutes until the cheese is melted and the top is golden and bubbling.
- Remove from the oven and garnish with extra chopped coriander or sliced jalapeños if desired.
- Slice and serve warm while the cheese is gooey and the nachos are crisp.
Notes
- Crush the nacho chips just before topping for maximum crunch.
- Use slightly stale bread for better structure and less sogginess.
- Go light on extra salt since cheese and chips are already salty.
- For a lighter version, replace mayonnaise with Greek yogurt.
- Reheat leftovers in the oven to re-crisp the crust.
