Ingredients

  • 1 and ½ cups graham cracker crumbs
  • ¼ cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 32 ounces cream cheese, softened
  • 1 cup granulated sugar (for filling)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon vanilla extract
  • ¼ teaspoon salt
  • 4 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat oven to 325°F (160°C). Wrap the outside of a 9-inch springform pan with aluminum foil.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan.
  3. In a bowl, beat cream cheese until smooth. Add sugar, flour, vanilla, and salt. Mix until combined.
  4. Add eggs one at a time, mixing on low speed. Fold in sour cream.
  5. Pour batter over crust. Tap the pan to release air bubbles.
  6. Place springform pan in a large roasting pan. Fill the roasting pan with hot water halfway up the sides.
  7. Bake for 1 hour and 15 minutes. Edges should be set, center slightly jiggly.
  8. Turn off oven, crack door open, and let cool for 1 hour. Then refrigerate at least 4 hours or overnight.
  9. Remove from pan, slice, and serve with desired toppings.
