Instructions
- In a medium saucepan over medium heat, combine butter, sugar, and milk. Bring to a gentle boil and cook for 1 minute, stirring constantly.
- Remove from heat and stir in peanut butter, vanilla extract, and butterscotch chips until melted and smooth.
- Fold in oats until well combined.
- Drop spoonfuls of the mixture onto wax paper or parchment-lined baking sheets.
- Let cool and set at room temperature for about 30–45 minutes, or chill in the fridge to speed up the process.
Notes
- Use quick oats for best texture — old-fashioned oats may make cookies too chewy.
