Description

No-Bake Butterscotch Cookies are sweet, chewy, and crunchy treats made with simple pantry ingredients. These cookies come together in minutes without turning on the oven — perfect for quick desserts or holiday trays.


Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1/2 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 1 package (11 oz) butterscotch chips
  • 3 cups quick-cooking oats

Instructions

  1. In a medium saucepan over medium heat, combine butter, sugar, and milk. Bring to a gentle boil and cook for 1 minute, stirring constantly.
  2. Remove from heat and stir in peanut butter, vanilla extract, and butterscotch chips until melted and smooth.
  3. Fold in oats until well combined.
  4. Drop spoonfuls of the mixture onto wax paper or parchment-lined baking sheets.
  5. Let cool and set at room temperature for about 30–45 minutes, or chill in the fridge to speed up the process.
