- 2 cups graham cracker crumbs
- 1 cup unsalted butter, melted
- 2 tablespoons brown sugar
- 2 cups soft caramels (about 50 pieces)
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 2 cups pecans, toasted and chopped
- 1/4 teaspoon sea salt
Instructions
- Line an 8×8 inch pan with parchment paper, leaving overhang for easy lifting later.
- In a bowl, combine graham cracker crumbs, melted butter, and brown sugar. Mix until well combined, then press firmly into the bottom of the pan to form the crust.
- In a saucepan over low heat, melt the soft caramels with heavy cream, stirring constantly until smooth.
- Remove from heat and stir in vanilla extract and chopped toasted pecans.
- Pour the caramel mixture over the crust and spread evenly.
- Let sit at room temperature for 15 minutes, then refrigerate for at least 2 hours or until set.
- Once firm, lift the bars out of the pan using parchment, slice with a hot knife, and sprinkle sea salt on top if desired.
- Serve chilled or at room temperature.
