A quick and easy no-bake cherry cheesecake served in individual cups or as a layered trifle. Perfect for summer desserts, parties, or whenever you want a sweet treat without turning on the oven.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/3 cup unsalted butter, melted
- 16 oz (2 packages) cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1 can (21 oz) cherry pie filling
Instructions
- In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined. Press about 2 tablespoons into the bottom of each serving cup or layer evenly in a trifle dish. Set aside.
- In a large bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, and beat until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Spoon or pipe the cheesecake filling over the crust layer in each cup or over the trifle base. Smooth the top with a spoon or spatula.
- Top with cherry pie filling.
- Refrigerate for at least 2 hours before serving for best texture.
Notes
- You can substitute graham crackers with crushed digestive biscuits or vanilla wafers.
- Try other pie fillings like blueberry, strawberry, or mixed berries.
- Make ahead and store covered in the fridge for up to 3 days.
