- 1 ½ cups dark chocolate chips or chopped bar
- 1 ½ cups puffed quinoa
- 2 tablespoons nut butter (almond or peanut)
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup or honey
- Pinch of sea salt
Instructions
- Line a baking sheet with parchment paper and set aside.
- Melt the chocolate with coconut oil and nut butter in a double boiler or microwave-safe bowl. Stir until smooth.
- Mix in the vanilla extract and maple syrup until well combined.
- Stir the puffed quinoa into the chocolate mixture until fully coated.
- Use a spoon or scoop to drop clusters onto the lined baking sheet.
- Chill in the fridge for 20–25 minutes or until firm.
- Sprinkle with sea salt or drizzle with white chocolate if desired, then serve and enjoy.
