Description

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • For the Frosting:
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Stir in mashed bananas, vanilla extract, and sour cream until combined.
  5. In a separate bowl, whisk together flour, baking soda, and salt.
  6. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  7. Pour batter into the prepared pan and smooth the top.
  8. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let bars cool completely before frosting.
  10. To make the frosting, beat together the butter, powdered sugar, milk, and vanilla until smooth and creamy. Add more milk as needed for spreadable consistency.
  11. Spread frosting evenly over cooled banana bars. Cut into squares and serve.
