- 1 cup granulated sugar
- 2 large eggs
- 1 cup mashed ripe bananas (about 2–3 bananas)
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- For the Frosting:
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Stir in mashed bananas, vanilla extract, and sour cream until combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Pour batter into the prepared pan and smooth the top.
- Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Let bars cool completely before frosting.
- To make the frosting, beat together the butter, powdered sugar, milk, and vanilla until smooth and creamy. Add more milk as needed for spreadable consistency.
- Spread frosting evenly over cooled banana bars. Cut into squares and serve.
Notes
- For a richer flavor, add a pinch of cinnamon or nutmeg to the batter.
- Top with chopped walnuts or pecans for added texture.
- Store bars in an airtight container for up to 3 days.
