Description

  • ½ cup unsweetened cocoa powder
  • ½ cup extra virgin olive oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup dark chocolate chips
  • Pinch of flaky sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
  2. In a large bowl, whisk together sugar, olive oil, and eggs until smooth. Add vanilla and mix again.
  3. Stir in cocoa powder, flour, and a pinch of salt until just combined. Fold in the chocolate chips.
  4. Pour the batter into the prepared pan and spread evenly. Sprinkle flaky sea salt over the top if desired.
  5. Give the pan a gentle tap to release air bubbles.
  6. Bake for 25 to 30 minutes or until a toothpick comes out with moist crumbs.
  7. Let cool completely in the pan, then lift out and slice into squares.
