Description

Juicy bone-in chicken thighs seared until golden and finished in the oven with fresh lemon, garlic, and herbs, all cooked together in one pan for maximum flavor and easy cleanup.


Ingredients

  • 6 bone-in, skin-on chicken thighs (about 2.5 pounds total)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 large lemon, zested and juiced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C) and place a large oven-safe skillet over medium heat.
  2. Pat the chicken thighs dry and season both sides with salt, black pepper, dried oregano, and thyme.
  3. Add olive oil to the skillet and heat until shimmering.
  4. Place the chicken skin side down in the skillet and sear for 5 to 7 minutes until golden and crisp. Flip the chicken and add the minced garlic around the pieces. Cook for 1 to 2 minutes until fragrant.
  5. Add lemon zest and lemon juice to the pan, then transfer the skillet to the oven. Bake for 20 to 25 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Remove from the oven and let the chicken rest for 5 minutes. Spoon the pan sauce over the top and sprinkle with chopped fresh parsley before serving.

Notes

  • For extra crispy skin, broil for 1 to 2 minutes at the end of cooking.
  • Let the chicken rest before serving to keep it juicy.
  • Use freshly squeezed lemon juice for the brightest flavor.
