Description
Juicy bone-in chicken thighs seared until golden and finished in the oven with fresh lemon, garlic, and herbs, all cooked together in one pan for maximum flavor and easy cleanup.

- 6 bone-in, skin-on chicken thighs (about 2.5 pounds total)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 large lemon, zested and juiced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon fresh thyme leaves
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C) and place a large oven-safe skillet over medium heat.
- Pat the chicken thighs dry and season both sides with salt, black pepper, dried oregano, and thyme.
- Add olive oil to the skillet and heat until shimmering.
- Place the chicken skin side down in the skillet and sear for 5 to 7 minutes until golden and crisp. Flip the chicken and add the minced garlic around the pieces. Cook for 1 to 2 minutes until fragrant.
- Add lemon zest and lemon juice to the pan, then transfer the skillet to the oven. Bake for 20 to 25 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes. Spoon the pan sauce over the top and sprinkle with chopped fresh parsley before serving.
Notes
- For extra crispy skin, broil for 1 to 2 minutes at the end of cooking.
- Let the chicken rest before serving to keep it juicy.
- Use freshly squeezed lemon juice for the brightest flavor.
