- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups beef broth
- 1 cup canned diced tomatoes, drained
- 1 cup shredded cheddar cheese
- ½ cup milk
- 1 tbsp olive oil
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- Optional: chopped pickles and ketchup for topping
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and garlic; sauté until softened.
- Add ground beef to the skillet, breaking it up with a spoon; cook until browned and no longer pink.
- Season with salt, pepper, and Worcestershire sauce.
- Add orzo pasta, beef broth, and diced tomatoes to the skillet. Stir to combine.
- Bring mixture to a boil, then reduce heat to low and simmer, uncovered, for about 10 minutes or until orzo is tender and most liquid is absorbed.
- Stir in milk and shredded cheddar cheese until cheese is melted and mixture is creamy.
- Remove from heat and let sit for 2 minutes before serving.
- Top with chopped pickles and ketchup if desired.
