Description

This One-Pot Chicken Parmesan Mac & Cheese combines the comfort of creamy macaroni and cheese with the crispy, savory goodness of chicken parmesan—all cooked in a single pot for a quick and satisfying meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 cups uncooked elbow macaroni
  • 3 cups chicken broth
  • 1 cup milk
  • 1/2 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup breadcrumbs (optional, for topping)
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot or deep skillet over medium heat.
  2. Season chicken with salt, pepper, and garlic powder. Add to the pot and cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
  3. In the same pot, add macaroni, chicken broth, milk, and marinara sauce. Stir well and bring to a boil.
  4. Reduce heat to medium-low and simmer uncovered for 10-12 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
  5. Stir in the cooked chicken, mozzarella cheese, Parmesan cheese, and Italian seasoning. Mix until cheese is melted and everything is well combined.
  6. If desired, sprinkle breadcrumbs on top and broil in the oven for 2-3 minutes until golden.
  7. Garnish with chopped parsley before serving.

Notes

  • Use rotisserie chicken for a shortcut version.
  • Swap mozzarella for provolone or fontina for a different cheese twist.
  • Add red pepper flakes for a touch of heat.
  • Use whole wheat or gluten-free pasta if preferred.
