- 10 phyllo pastry sheets, thawed if frozen
- 8 ounces (225 grams) feta cheese, crumbled
- 3 tablespoons olive oil
- 1/4 cup (60 milliliters) honey
- 1 teaspoon red chili flakes
- 1 tablespoon fresh thyme leaves
- 1/4 teaspoon freshly ground black pepper
Instructions
- Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius) and line a baking sheet with parchment paper.
- In a bowl, gently mix the crumbled feta, fresh thyme leaves, and black pepper until evenly combined.
- Lay one sheet of phyllo on a clean surface and brush lightly with olive oil. Place a second sheet on top and brush again.
- Spoon a line of feta mixture along one edge of the layered phyllo and roll tightly into a log. Place seam side down on the prepared baking sheet. Repeat with remaining sheets and filling.
- Brush the tops lightly with olive oil and bake for 15 to 18 minutes, until golden brown and crisp.
- While baking, gently warm the honey in a small saucepan and stir in the red chili flakes.
- Remove rolls from the oven and drizzle with warm chili honey before serving.
Notes
- Keep phyllo covered with a damp towel while working to prevent drying.
- Do not overfill the rolls to avoid bursting during baking.
