A simple and flavorful side dish featuring crispy oven-roasted Yukon Gold potatoes and caramelized onions, seasoned with herbs and olive oil.

- 1 kg Yukon Gold potatoes, cut into 1-inch chunks
- 1 large yellow onion, sliced
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary or thyme
- Salt and black pepper to taste
- Fresh parsley, chopped (optional for garnish)
Instructions
- Preheat oven to 425°F (220°C).
- In a large bowl, toss potatoes and onions with olive oil, garlic powder, rosemary (or thyme), salt, and pepper.
- Spread the mixture evenly on a baking sheet lined with parchment paper or foil.
- Roast in the oven for 35–40 minutes, stirring once halfway through, until potatoes are golden and crispy and onions are caramelized.
- Remove from oven, garnish with fresh parsley if desired, and serve warm.
Notes
- For extra crispiness, soak potato chunks in cold water for 30 minutes before roasting, then dry thoroughly.
- You can use red onions for a slightly sweeter flavor.
- Adjust herbs and seasonings to your preference — paprika or Italian seasoning work well too.
