Description

A simple and flavorful side dish featuring crispy oven-roasted Yukon Gold potatoes and caramelized onions, seasoned with herbs and olive oil.


Ingredients

  • 1 kg Yukon Gold potatoes, cut into 1-inch chunks
  • 1 large yellow onion, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary or thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, toss potatoes and onions with olive oil, garlic powder, rosemary (or thyme), salt, and pepper.
  3. Spread the mixture evenly on a baking sheet lined with parchment paper or foil.
  4. Roast in the oven for 35–40 minutes, stirring once halfway through, until potatoes are golden and crispy and onions are caramelized.
  5. Remove from oven, garnish with fresh parsley if desired, and serve warm.

Notes

  • For extra crispiness, soak potato chunks in cold water for 30 minutes before roasting, then dry thoroughly.
  • You can use red onions for a slightly sweeter flavor.
  • Adjust herbs and seasonings to your preference — paprika or Italian seasoning work well too.
