- 4 cod fillets, about 6 ounces each, skinless and boneless
- 1 cup freshly grated parmesan cheese
- 1/2 cup plain breadcrumbs
- 1 teaspoon garlic powder
- 1 tablespoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 whole lemon, cut into wedges
Instructions
- Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
- In a mixing bowl, combine parmesan cheese, breadcrumbs, garlic powder, dried parsley, salt, and black pepper. Stir until evenly mixed.
- Pat the cod fillets dry and place them on the prepared baking sheet.
- Brush each fillet lightly with olive oil.
- Spoon the parmesan mixture evenly over the top of each fillet and press gently so it adheres.
- Bake for 12 to 15 minutes, or until the fish flakes easily with a fork and the topping is golden brown.
- Remove from the oven, rest for 2 minutes, then squeeze fresh lemon juice over the top before serving.
Notes
- For extra browning, broil for 1 to 2 minutes at the end of baking.
