Description

Crispy, golden parmesan crusted cod baked to perfection with a tender, flaky interior and a fresh squeeze of lemon. A quick and satisfying seafood dinner that feels elegant yet comes together in just 25 minutes.


Ingredients

  • 4 cod fillets, about 6 ounces each, skinless and boneless
  • 1 cup freshly grated parmesan cheese
  • 1/2 cup plain breadcrumbs
  • 1 teaspoon garlic powder
  • 1 tablespoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 whole lemon, cut into wedges

Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine parmesan cheese, breadcrumbs, garlic powder, dried parsley, salt, and black pepper. Stir until evenly mixed.
  3. Pat the cod fillets dry and place them on the prepared baking sheet.
  4. Brush each fillet lightly with olive oil.
  5. Spoon the parmesan mixture evenly over the top of each fillet and press gently so it adheres.
  6. Bake for 12 to 15 minutes, or until the fish flakes easily with a fork and the topping is golden brown.
  7. Remove from the oven, rest for 2 minutes, then squeeze fresh lemon juice over the top before serving.

Notes

  • For extra browning, broil for 1 to 2 minutes at the end of baking.
