- 1 package peach gelatin mix, 3 oz
- 1 cup cottage cheese
- 1 cup crushed pineapple, well drained
- 1 1/2 cups mini marshmallows
- 2 cups whipped topping
Instructions
- Chill your mixing bowl and spatula for 10 minutes to help the fluff set nicely.
- In the chilled bowl, stir the cottage cheese with the peach gelatin mix until the color is evenly peach and no dry specks remain.
- Drain the peaches and crushed pineapple thoroughly to remove excess liquid.
- Fold the diced peaches, crushed pineapple, and mini marshmallows into the cottage cheese mixture until just combined.
- Gently fold in the whipped topping until the mixture looks airy and uniformly peachy.
- Spoon the mixture into a serving dish or individual cups and smooth the top.
- Cover and chill for at least 2 hours before serving so the flavors meld and the texture firms up.
