Description

These Peppermint Hot Chocolate Cookies capture all the cozy flavors of the classic winter drink—rich chocolate, gooey marshmallows, and cool peppermint—in a soft, fudgy cookie.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup crushed peppermint candies or candy canes
  • 1 cup mini marshmallows

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream the butter and sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and peppermint extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. Fold in the chocolate chips and crushed peppermint candies.
  7. Scoop tablespoon-sized balls of dough onto the baking sheet, spacing them about 2 inches apart.
  8. Bake for 8–10 minutes, then carefully press a few mini marshmallows into the tops of each cookie and bake for an additional 2 minutes until the marshmallows puff slightly.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra chocolate flavor, drizzle with melted chocolate after baking.
  • Use peppermint baking chips in place of crushed candies for a smoother texture.
