These Peppermint Hot Chocolate Cookies capture all the cozy flavors of the classic winter drink—rich chocolate, gooey marshmallows, and cool peppermint—in a soft, fudgy cookie.

- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract

- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup crushed peppermint candies or candy canes
- 1 cup mini marshmallows
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream the butter and sugar until light and fluffy.
- Beat in the egg, vanilla extract, and peppermint extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Fold in the chocolate chips and crushed peppermint candies.
- Scoop tablespoon-sized balls of dough onto the baking sheet, spacing them about 2 inches apart.
- Bake for 8–10 minutes, then carefully press a few mini marshmallows into the tops of each cookie and bake for an additional 2 minutes until the marshmallows puff slightly.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra chocolate flavor, drizzle with melted chocolate after baking.
- Use peppermint baking chips in place of crushed candies for a smoother texture.
- Store in an airtight container for up to 5 days or freeze for longer storage.
